Keto Chicken Fajitas
Good luck trying to "fajita" these bad boys into your mouth - try not to inhale them! They're THAT good!

Ingredients
- one lb boneless skinless chicken breasts
- one large white onion
- one red bell pepper
- one green bell pepper
- one tbsp olive oil
- two and a half tbsp fajita seasoning (recipe below!)
- one jalapeno, optional
- four tbsp chili powder
- eight tsp ground cumin
- eight tsp smoked paprika
- eight tsp garlic powder
- four tsp onion powder
- four tsp Sugar (use Swerve for a Keto alternative)
- two tsp black pepper
- two tsp sea salt
- two tsp cayenne pepper
Instructions
Fajitas Seasoning:
- Combine all of the spice ingredients in a mason jar and shake until blended.
Fajitas:
- Chop chicken, peppers and the onion into 1/4 inch slices. Dice the jalapeño
- Heat the oil in a large skillet. Add the chicken to the skillet then sprinkle about half of the fajita seasoning over the chicken and toss. Cook the chicken for 5 to 10 minutes until it’s fully cooked and no longer pink, and it’s slightly browned, but not burned. Transfer the chicken to a plate and set aside
- In the same pan add peppers, onions and jalapeño and sauté until soft and slightly brown
- Add the chicken back into the pan and the other half of the fajita seasoning and 1 cup of water
- Cook on medium-high heat until water has cooked off.
